Description: This is a Pomace Spirit, and is the product of Mark Dunemann that dedicated his efforts to using grape pomace from some of Victoria’s best winemakers and adopting new forms of very traditional European Grappa and Brandy techniques. It as been produced in collaboration with Nikki Palun of Octtava Wines using Sagrantino grapes that are not commonly found outside of Italy. The resulting spirit is bold and rich flavours of chocolate, dried fruit, licorice and Sarsaparilla.
