Description: This is a Pinot Noir from Merricks that produces a balance between vibrant aromatics, silky smooth palate and firm refreshing tannins. This is a fragrant, with raspberry and cranberry notes. Allies is the product of former Chef and Sommelier David Chapman that is a Pinot Noir specialist and works across sites in Balnarring, Merricks and Tuerong to showcase Pinot Noir varieties. Simply, his approach is that nothing is added unless absolutely necessary and any processes that may take away from the concentration and character of the wine are eschewed. So, no stems, no added yeasts, no ferment supplements, natural Malolactic fermentations and never any fining or filtration.
